- 6 peaches cut in half, pit removed
- 4 tablespoons butter
- 3 tablespoons sugar
- 1 1 cinnamon stick (or 1 teaspoon ground cinnamon)
- 1 vanilla bean split in half, seeds scaped out
- pinch salt
Pre-heat oven to 375 degrees.
Slice peaches in half and remove the pits. Arrange them cut side up in an oven-safe baking dish. Melt butter and drizzle over peaches. Sprinkle with sugar, cinnamon, and vanilla. Optional: add other stone fruit such as nectarines or plums.
Bake for 15 minutes, until the peaches are tender and caramelized.
- Don’t overcrowd the pan. Leave space between the peaches so they caramelize instead of steam.
- To store – leftover peaches, place in an airtight container in the refrigerator for up to 4–5 days.
- To reheat – warm baked peaches in a 350°F oven for about 10 minutes, until heated through.
- When possible, buy local and organic peaches.
