    Roasted Strawberries

    Roasting strawberries concentrates their natural sugars for a sweeter, deeper and richer strawberry flavor! The berry juices transform into a deliciously thick syrup with floral vanilla notes.

    These jammy and easy-to-make roasted strawberries are a deliciously versatile summer condiment. Enjoy them warm or chilled. Serve them over your favorite yogurt or ice cream or yogurt, stir them into oatmeal, slather them on pancakes, waffles, crepes, or French toast and so much more.

    If you can slice strawberries and turn on an oven, you can make this recipe!

    The heat tenderizes firm, under-ripe fruit and the subtle use of aromatic ingredients, like vanilla and maple syrup and a squeeze of lemon, breathes new life into even the blandest of berries, turning them into the delightful summer fruits.

    Why this Recipe Works

    • Quick & easy! Toss all ingredients together and roast.
    • Sweeten any strawberry without adding extra sugar. The heat concentrates their natural sugars for a sweeter, deeper and richer strawberry flavor. No extra sugar necessary with this method.
    • Breathe new life into underripe or bland berries. The heat sweetens and the subtle aromatics will brighten and transform even the blandest of berries,
    • Recipe is versatile. Quantity can be halved or doubled. Sweetener, spices and herbs can easily be swapped out.
    • Multi-use recipe: Eat them on their own or use them as a topping. See all the serving suggestions below. The possibilities are endless!

    Roasted strawberries are just as versatile as raw berries, and it's up to you whether to enjoy them warm or chilled.

    SIMPLICITY AT IT'S VERY BEST! The juices from the roasted strawberries combine with the maple syrup to create a strawberries syrup that are greater than the sum of its parts. 

    How to Make these Roasted Strawberries:

    Pre-heat oven. Slice strawberries. Toss with maple syrup (or other sweetener of your choice) on baking sheet until evenly coated; add spices and a pinch of salt. Let the oven do the rest of the work and enjoy!
    Cooks Tip: don’t crowd baking sheet.

    Roast Strawberry Serving Suggestions

    Some suggestions are: yogurt, ice cream, oatmeal, pancakes, waffles, cakes, crepes, cheesecakes, biscuits, toasts and more.

    Roasted Strawberries

    Roasting strawberries concentrates their natural sugars for a sweeter, deeper and richer strawberry flavor!

    Ingredients

    • 2 pints fresh strawberries 1.5 pounds or about 4 cups sliced
    • 1-2 tablespoons maple syrup or honey, date syrup, sugar, or another sweetner of your choice
    • 1 vanila bean or 1 tablespoon of vanilla bean paste
    • 1 cinnamon stick optional
    • 3 fresh thyme sprigs optional
    • pinch kosher salt

    Instructions

    • Pre-heat oven to 350 F degrees.
    • Rinse and hull strawberries. Leave tiny ones whole, halve or quarter the rest so they’re all roughly the same size and cook at about the same rate. Add strawberries to a baking dish. 
    • Add maple syrup (or sweetener of choice), vanilla, cinnamon sticks and thyme (if using or other spices of choice) to baking dish with strawberries. Toss to coat strawberries evenly. 
    • Bake for 20 min, stirring once along the way. 
    • Enjoy straight out the oven or store in an airtight container in the refrigerator.

      Oh yes! Roasted strawberries are just full of flavour and they go so well with almost anything! My favourite is to simply add them to some yogurt or ice cream, but I will happily eat them on their own!

      I bake with fresh strawberries all the time, but I've never considered roasting them. What a brilliant idea! I bet these would be sooo good with a spoonful of lemon curd.

      These might be lovely, and I want to try them, but it is deceiving to see so many of the commentors give five star reviews only to read that all of the reviewers only say that they want to use your recipe, or that they know that roasted Strawberries are so good but with no mention of how good your particular recipe is. --- There should be a way for readers to see the difference between "encouraging stars" and "reviewing stars." That is disappointing....
